Roy Hernandez started his coffee venture with his wife, Rosy Dariela Macia. Being born into coffee families, they had each inherited plots of land which when combined, amounted to 1.7 hectares. Roy's lot is called Finaca Guayabina while Rosy's is El Mandarino. It wasn't much, with Roy and Rosy having to also work full time jobs to provide for their family.
In 2016, they began preparing specialty lots as part of CAFESMO, a local co-op with over 280 members. Through CAFESMO Roy and Rosy learnt new processing techniques and exposed them to new markets. Over time, they expanded their offering to also offer naturals and anaerobic. In time, these allowed them to purchase more land and expand their operation.
Sweet, juicy and complex, this coffee featured flavours of plum, lychee and pear with additional notes of currants, chocolate and almond.
