La Cordillera de Dipilto / Jalapa is the mountain range that runs along the border between Nicaragua and Honduras. It has the highest peaks in the country with cloud covered summits and steep slopes shrouded by pine forests. This terrain provides near ideal conditions for growing coffee and it is no surprise small farming communities are prevalent in the area. Despite being one of the smaller coffee growing Departments of Nicaragua, Nueva Segovia is known for it’s high quality coffee with the municipality of Dipilto in particular producing a number of Cup of Excellence winners. Achievements which cause some to call Dipilto the capital of Specialty Coffee in Nicaragua.
This coffee was produced by 15 small-scale growers from the municipalities of Dipilto, Mozonte, San Fernando and Jalapa. Each with their own micro-mill, the coffee was processed using the washed method and Naturally fermented in cement tanks for 14-24 hours at the farm. Final drying on raised beds under shade and milling was performed at Beneficio Las Estrella in Ocotal.
In the cup, this coffee displays floral notes of jasmine, mandarin and chocolate with hints of hazelnut and reminds us of a subtle, Ethiopian Sidamo coffee.
